Hitting it just fills the destructometer, so you get an extra bird/spell to play.

If you can manage it, it’s best to hit the gold pig when the meter is closer to empty. You get more benefit out of it than when it’s nearly full anyway. But be aware that if you kill all the other pigs first, you don’t get a shot at goldie.

If you get a card before hitting the golden pig, do you get a second card in the same room? It seems like I am not getting a second card when I have already received a card, but maybe I am wrong.

Sometimes you get 2 birds in one shot, sometimes not. To pay safe, you have to allow for two seconds between you get the first card and the destruction of the golden pig. Very good timing is required.
