Meaning of scores shown on each episode

Just one basic question. I don't understand the scores shown on the thumbnail for each episode, for example Hang Em High shows 76/144 and Poached Egges has 136/189.
Should I be trying to get three starts on all the episodes and levels? Oops I guess that is two questions. Thanks. -

1. It's the total of stars on that episode
2. Up to you (but you better to do it!) -
189 = 63 levels * 3 stars each.
