One of the easier ways to 3 star Year of the Dragon level 1-1 is to lob the Red bird into the first gap, hitting the firework. Ideally you want the firework to hit the middle structure, knocking it down as well as the first structure. Then you just have to clean up the rest with the Yellow bird. The score in the video below is 78,250.
