Bad Piggies Rise and Swine Bonus Level 2-VIII (2-8) can be 3-starred using two contraptions. To grab the star box actually requires a double-contraption that PiGineering would be proud of! Use a small 3-box vehicle with boxing gloves atop a 5-box L-shaped cart powered by motored wheels. Speed down the ramp, allowing the smaller vehicle to continue on the higher road. Then use the boxing gloves to hop your way to the finish line. Without a motor, adjust the lower vehicle to simply tilt under the weight of the boxing cart.

This level can be three starred in a single run. Use the normal route without the engine, but when you are about to land on the ledge above to the left of the star box, use the boxing gloves to slow down the landing and make your contraption fall down on the star box. Then jump back up and continue to the finish line.
I also nailed it in a single run (after many ham-fisted attempts).
3rd row from bottom is down-punch / pig in metal box / down-punch.
2nd row from bottom consists of a wooden box under each down-punch.
Bottom row consists of big tire under left box, and small tire under right box.
Big tire has weak motive power even without an engine, so turn it on to go down the slope.
When close to the gap in the floor, fire the punches to launch pig+punchers module.
The angle created by the different-size wheels helps get you to the platform at right.
Keep punching away to go up the platforms, and to take the detour for the star.
